肉蓉扒菠菜 Minced Meat With Spinach

肉蓉扒菠菜


材料:

豬肉碎 4両

菠菜 12両

鹹魚 少許



豬肉調味料:

糖,鹽,麻油 少許

生抽,生粉 1/2茶匙

水 1湯匙



汁料:

糖,鹽,麻油 1/4茶匙

蠔油 1茶匙

上湯 4湯匙

生粉 1/2茶匙



做法:

1.菠菜去根,用油鹽水灼熟.

2.鹹魚去骨切碎炒香.

3.豬肉加入調味料拌勻.

4.燒熱1湯匙油,將豬肉炒熟,加入汁料煮滾後淋在菠菜上,再灑上鹹魚碎便可.



Minced Meat With Spinach


Ingredients:

4 tael minced pork

12 taels spinach

a little salted fish



Seasoning for pork:

Dash of sugar,salt and sesame oil

1/2 tsp each of light soya sauce and cornflour

1 tbsp water



Sauce:

1/4 tsp each of sugar,salt and sesame oil

1 tsp oyster sauce

4 tbsps stock

1/2 tsp cornflour



Method:

1.Trim spinach and cut into sections.Blanch in salt water until cooked.Drain well and place on serving dish.

2.Remove bones from salted fish.Shallow fry until cooked and chop finely.

3.Mix pork with seasoning.

4.Heat 1 tbsp of oil and minced pork until cooked.Pour in sauce ingredients and bring to the boil.Pour on top of spinach.Sprinkle on chopped salted fish and serve.
