香芋鮮蝦飯 Taro rice with fresh prawns

香芋鮮蝦飯


材料:

米300克,
水2杯,
荔芋切粗粒1/4個,
鮮蝦半斤
菜甫粒1湯匙,
香芹切粒1棵,
麻油1湯匙



調味:
鹽,胡椒粉適量,
蛋白1份,
生粉1/2茶匙



豉油汁:
生抽1/4杯,
老抽2湯匙,
上湯1/4杯,
糖1湯匙



做法:

1.鮮蝦去殼去腸,用鹽略擦去潺,再沖淨抹乾.

2.米洗淨,加水份及將芋頭一同煲熱,水漸收乾,加入鮮蝦仁,菜甫,香芹煮至飯熟.

3.燒滾上湯,把糖溶於上湯內,加入生抽及老抽

4.飯熟後,再焗5分鐘後上枱

ingredients:
300 g rice,
2 cups water,
1/4 taro(cubed),
1/2 catty prawns,
1 tbsp dried radish (chopped),
1 stalk chinese celery(chopped),
1 tbsp sesame oil.



seasonings:
salt,white pepper to taste,
1 egg white,
1/2 tsp cornstarch



sauce:
1/4 cup light soya sauce,
2 tbsp dark soya sauce,
1/4 cup chicken stock,
1 tbsp sugar.



steps:

1.shell prawns, devein and rub with sait to remove slime, rinse and pat dry.
wash rice,add water and taro.

when water has almost dried out,add prawns,dried radish and celery, and cook until rice is done.

2.heat stock and melt sugar in it.

mix with light and dark soya sauce to make sweet sota sauce.

leave rice covered for another 5 min.,after rice cooked.loosen rice mixture with chopsticks,serve with sweet soya sauce and sesame oil for extra aroma
